One Small Bite at a Time

Food can create memories that will last a lifetime, not only in flavor, but also the moments they are created and shared. My dream is to be able to create these moments and memories by the experiences of my "foodie chic" lifestyle through displaying essential ingredients and stages to having success in culinary school, the tastes of local restaurants, and the sharing and creating of recipes. Similar to an amuse bouche to a meal, a dream starts small and slowly grows into extraordinary.

S'more of What?

My brother's favorite type of cupcakes are S'more and so recently made my own play on a s'more cupcake. It was a fun process of making and the end was definitely worth it!

Ingredients
6 graham crackers, crushed
2 tbsp sugar
2 tbsp butter, melted
1/2 cup mini chocolate chips

Chocolate Cake Recipe

Marshmallow Buttercream
1 stick butter, room temperature
2 cup marshmallow fluff
2 cups powdered sugar
2 tbsp. whipping cream
Mix the graham crackers, sugar, and butter together. Spoon to tablespoons into the bottom of each muffin tin and smooth evenly. I like to use the bottom of a narrow glass. Excess crumbs should be set aside for garnish later.

Once the crust is in place, sprinkle the chocolate chips over the top.

Pour the chocolate cake over the crust and bake according to the baking time for the cake.

For the buttercream, cream the butter and fluff together. Once it is smooth add the powdered sugar in 1/2 cup at a time and 1/2 tbsp of whipping cream at a time. I had excess so I cut out the centers of the cupcakes and filled them with the buttercream too. I garnished with chocolate ganache and extra graham cracker crumbs.

These are a yummy treat that everyone will enjoy! Especially when you need a nice summery treat! Enjoy! xo
